'How easy is that' ?

I visited Sam out in the "LA area" to celebrate New Years '09... and that is when I realized that we've both grown into talented chefs (I recall a time when Sam ate cereal for dinner, no joke). We feasted on quite a few delicious meals while I was there, and Sam always made sure we had perfect wine/champagne pairings to go along!

This particular night, we made one of Ina Garten's recipes for Eggplant Ricotta and also made some tasty kale dish (possibly a Giada creation?). Sam has all the recipes so I'm going to let her post those and fill in the details. For now, here are the photos!
